HOT SMOKED SALMON BRUSCHETTAMakes 30
1 baguette, cut into 1 cm slices
Preheat the oven to 200oC, gas mark 6.
Place the sliced baguette on a large baking sheet. Mix the oil and garlic together and use to brush over the bread. Season and bake for 10 minutes. Spread with ricotta.
Meanwhile, make the toppings....
Salmon, Crème Fraîche & Red Onion Topping
Mix crème fraîche, onion and dill season to taste. Spoon onto bruschetta and top with smoked salmon.
Salmon & Fish Roe Sauce Topping
Place smoked salmon on the bruchetta and top with a little salmon roe sauce. Garnish with sprigs of dill.
Chunky Salmon Pate Topping
Mix all ingredients together and spread over the bruschetta. Garnish with a twist of lemon and sprigs of dill.
